Psychedelic Cupcakes






Nothing cheers me up more than baking some colourful cupcakes:) You cannot be grumpy after biting into one. I made some yesterday and brought them over to a friends house. There is something great about watching people bite into them. And look of shock that appears on there face is priceless. This batch was more on the turquoise/purple scheme. The others that were eaten by my lovely friends, were more fuschia pink/lime green. I recommend making them, so much fun!

  2. Here is the recipe I used:
    1 cup soy milk ( or regular milk)
    1 teaspoon apple cider vinegar
    1 1/4 cups flour
    2 tablespoons cornstarch
    3/4 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/3 cup canola oil
    3/4 cup sugar
    2 teaspoons vanilla extract

    mix wet ingredients together, and make sure the dry ingredients do not have any lumps (sifting them would be ideal) and then combine them all together. This is where the fun happens! Food colouring:) I mix up a bunch of different custom crazy neon colours and layer them in the muffin tins. Preheat the oven to 350 degrees, bake for 20-22 minutes.

    They will smell yummy.

    While they bake you can make the icing,
    1/2 cup nonhydrogenated shortening
    1/2 cup margarine
    3 1/2 cups confectioners' sugar
    1 1/2 teaspoons vanilla extract
    1/4 cup soy milk (any milk you use)

    mix the shortening and margarine ingredients together first, then add the sugar etc. mix until fluffy (approx 5-7 min)

    Add more colour to the icing if you like...

    Tah-dah! beautiful cupcakes that will taste yummy and look amazing!
